My husband and I LOVE Brio. We hardly ever eat out so when we do the food better be amazing and something I cannot easily recreate at home. There is nothing worse than paying for a sitter, getting dressed up, going out and having a so-so meal. The reason we love Brio so much? They never disappoint. I have never had a meal there that I regretted and that is saying a lot. My husband and I decided to celebrate Valentine’s Day a bit early and we headed to Brio for a dinner out. Right now, Brio has a new menu featuring all kinds of amazing Risotto and just to be thorough we tried it all for you!
So, let’s talk Risotto (YUM). Brio is offering Sweet Potato & Chicken Risotto (chicken, pancetta, asparagus, sweet potatoes and pine nuts), Salmon Risotto (grilled salmon, mushrooms, red peppers, asparagus and basil) and Sea Scallop Risotto (pan seared sea scallops, ratatouille vegetables, basil and red pepper). All 3 of these risottos were amazing, almost too good since I loved them all and definitely ate too much.
My number one favorite was the Sea Scallop Risotto. I cannot resist a good scallop and these were amazing. The veggie risotto combination was perfection and the fresh basil was the perfect flavor combination to make it really pop! A very close second was the Sweet Potato & Chicken Risotto which surprised me. I don’t often get chicken at restaurants as it tends to be a safe dish, this was exploding with flavor in all the good ways! All my favorites were included in this dish and it was light yet very filling. My husband’s number one risotto was the Salmon Risotto. This was also delicious and is perfect for someone who loves perfectly grilled salmon. All the dishes were such great complete dishes with the flavors being perfect compliments to one another. You wanted some of everything in each bite!
Stop in to Brio at either Easton or Polaris before this delicious menu is gone, last day is March 25!
