I am always looking for easy dishes that are healthy and delicious. This summer I stumbled upon a new favorite dish and it has been on repeat. This dish is really easy to make and you can eat leftovers for days and it still tastes just as good. The key to this dish is the red cabbage slaw, I could eat a bowl of just this slaw, it is that good.
A few months ago I purchase a spiralizer and I am so glad I did, because I use it every time I make this red cabbage slaw. I love that I can spiralize half a head of cabbage in no time at all and it keeps for quite a while. For the carrots I use a simple peeler and voila you have the makings of a delicious red cabbage slaw. I put this red cabbage slaw on everything from tacos to this bbq chicken and rice bowl.
- 1 pound chicken boneless skinless breasts
- 1 bottle bbq sauce
- 1 can root beer
- 1 can corn kernels
- half a head of red cabbage spiralized
- 4 carrots – shredded with a peeler
- 4 cups white rice
- 3 TBS rice wine vinegar
- 1 tsp sesame oil
- sea salt to taste
Place the chicken breasts, bbq sauce and half a can of root beer in the slow cooker and cook on slow 6-8 hours. Once done cooking shred and let sit to absorb the sauce. Make rice ( I use my rice cooker) and heat corn in the microwave. To make the red cabbage slaw toss red cabbage and carrots in a bowl with rice wine vinegar, sesame oil and salt.
Assemble your bowl. I put rice first then corn, chicken and finally lots of red cabbage slaw on top!
