Appetizers are always hard for me especially around the holidays. All my favorite appetizers are either summer themed or they are hot which gets complicated if you have too many. When you have too many hot appetizers some will inevitably get cold while waiting for the others to be heated up. This year I knew I needed to find an easy appetizer that could be made ahead of time and served cold, while still looking great. A tall order, yes, but I did it and I am loving the result.
I love hummus so I decided to make that a part of my recipe and I knew I wanted fresh veggies, topping hummus with them only made sense. All that was left was the perfect way to serve them and that is where Keebler Crackers come in. I walked into Giant Eagle and was met by a beautiful display of Keebler Crackers, so many to choose from and they all would have made a delicious appetizer. They also had Oreos, Dannon Oikos Yogurt Drinks, both great editions to any party themselves,and even great Hallmark holiday cards. Giant Eagle stocks everything you need for the perfect holiday party, a one stop holiday destination, I even found an adorable mini Christmas tree to complete my holiday decor.
I decided the Keebler Toasteds would be perfect for my appetizer and added some to my cart as well as some Market District Roasted Red Pepper Hummus. I also purchased a red bell pepper, yellow bell pepper and carrots. Once home I diced the peppers and grated the carrots to use as topping on the hummus.
I opted to use the Keebler Toasteds Harvest Wheat Crackers as the foundation of my appetizer, I then added a spoonful of hummus and topped with diced peppers and grated carrots. The result is a satisfying, delicious and easy cold appetizer that is perfect for holiday parties.
These holiday appetizers turned out beautifully. Not only do they look pretty but they taste great too. After I made them I placed them in the fridge and to my delight they stayed fresh for several hours, so you can easily make them ahead.
