As the weather cools my family wants meals that fill them up and keep them warm. Noodles are a favorite at our house, they are something every one will eat and no one will complain about. When you come in from the winter cold around here you need a hearty meal that fills you up and warms you from the inside out and that is exactly what you get with this Easy Chicken & Noodle Bake recipe.
There was time when I made my own noodles, I spent the afternoon in the kitchen making them and they were so delicious. These days my 5 girls keep me way too busy to make my own noodles and I miss it. I have been on the hunt for a noodle that tastes like my homemade and I finally found it in Reames frozen egg noodles. These delicious and hardy noodles are the only ones that taste like homemade and I can not get enough of them. Beyond putting them in my chicken noodle soup ( of course) they are perfect for this easy and delicious chicken and noodle bake.
Chicken and Noodle Bake Recipe
- Boneless Skinless chicken breast diced
- 2 packs Reames Frozen Egg Noodles
- 3 cans chicken stock
- 1 can beef stock
- 2 cups carrots chopped
- 1 can of sweet corn
- 2 cups shredded cheddar cheese
- 1 cup panko bread crumbs
- 1 tsp oregano
- 1 tsp thyme
- salt & pepper
Throw all the ingredients into a pot and turn it on high and bring to a boil. Once boiling add chicken and noodles and cook for 15-20 minutes. Once the chicken in cooked through scoop into an oven safe dish and mix in cheese, then top with panko crumbs. Place in the oven on broil for 10 minutes or until topping is golden brown and cheese is melted. Serve and enjoy!
My family loved this easy chicken and noodle bake and it really takes no time to make at all. The Reames frozen egg noodles take this dish to the next level with thick delicious noodles and we can not get enough of them at our house!
