This year my life took on a whole new level of crazy and only 3 of my 5 kids are old enough for school and all kinds of activities in the evening!!!
We are a family that values our meal time and we make it a priority to eat together every single night. I know those days are coming to an end very soon so I am holding on as long as I can. Various practice schedules that overlap mean there will be nights one or more person is missing from the dinner table, this fall we had that on Monday nights, my husband and 2 of the girls walked out the door to soccer practice as my oldest was being dropped off from volleyball practice. I really hated that we were not all seated together but it could not be helped so we did the best we could.
In order to make sure Monday was the only night we were not all at the table together I needed to get more creative with recipes these past few months. I pride myself on healthy home cooked meals for my kids but those take time and 3 days a week time is in short supply. Buying food that is already prepped for you and using it in a new and creative way is the perfect weeknight meal solution.
Calzones are a favorite food at our house and usually I make the dough and then the chicken cooks in the slow cooker all day, well that is not the most time efficient meal so I made a few changes. Farm Rich makes Buffalo Style Boneless Chicken Bites as well as Barbecue Style Boneless Chicken Bites both of these would be perfect in a calzone and save a lot of time. I replaced homemade dough with Kroger brand jumbo crescent rolls and added some shredded cheddar cheese for a delicious and quick calzone. This favorite dish is now an easy weeknight meal that can be made in 25 minutes!!!
Buffalo Chicken Calzones
- Farm Rich Buffalo Style Boneless Chicken Bites (or substitute Farm Rich Barbecue Style Boneless Chicken Bites)
- Shredded Cheddar Cheese
- Jumbo Crescent Rolls
Preheat oven according to crescent roll package. Place Farm Rich Buffalo Style Boneless Chicken Bites on a microwave safe plate and heat on high for 1 1/2 minutes. Unroll crescent rolls and add one chicken bite to each one. Squirt a small amount of buffalo sauce on the chicken and add some shredded cheddar cheese. Roll up the crescent roll, be sure to seal the ends so all the filling stays inside. Cook on an ungreased cookie sheet according to crescent roll package approx 12-15 minutes. Serve and enjoy.
