Everywhere you turn it is basketball, basketball, basketball, it is March after all! So whether you are a hard core fan or married to one you can at least enjoy the madness by throwing a basketball viewing party. The best part about this time of year is you don’t have to schedule your party around your favorite team as the hardcore fans are watching every single game!
Over the weekend we had some family over and enjoyed delicious food, basketball and some great company. The spread was made up of favorites in new ways, but nothing crazy or complicated. We used some favorite brands like OREOS, Original Wheat Thins, Coke Zero, Ritz Crackers and Reese’s Mini Peanut Butter Cups. All things we love and enjoy alone but together they make great party food.
I knew I wanted an over the top delicious cake so I enlisted the help of my talented friend, gave her a bag of Reese’s Mini Peanut Butter Cups and told her to go to town. The Reese’s Peanut Butter Cup cake she made was amazing! It was covered in these bite sized Reese’s Mini Peanut Butter Cups and even had a peanut butter filling! I love how she cut the mini Reese’s to edge the cake, such a great effect, and of course the marshmallow fondant basketballs and Reese’s Mini basketball hoop were a hit!
For the main dish I went with a classic game time favorite, chicken wings. I decided to mix it up a bit by breading them with Ritz crackers and the result was amazing! I did two different version one with traditional wing sauce and one with a sweet chili sauce, everyone said it was a toss up as to which tasted better. The best part about these wings is they are baked so you bread them, throw them in the oven and walk away!
Ritz Cracker Crusted Chicken Wings
- Chicken wings
- Ritz Crackers
- Olive Oil
- Buffalo Wing Sauce
- Sweet Chili Sauce
Place the crackers in a blender and make crumbs. Brush each wing with olive oil then roll it in the Ritz Cracker crumbs. Bake on a greased pan at 350 for 20 minutes then turn the temperature up to 400 and bake for another 10-20 minutes depending on the size of your wings. I cooked larger wings and they needed 20 minutes at 400. Remove when the breading is turning a dark golden brown. Then brush the wings with your chosen sauce and serve.
To round out our food selection I added a family favorite dipping sauce this Easy Chili Cheese Sauce but to change things up a bit I put out Original Wheat Thins instead of traditional tortilla chips, I really liked the change. Of course we had to have more than one dessert so I put together these super easy OREO pudding cups. Simply crush your OREOS and layer them with vanilla pudding. I totally bought the $1 pudding cups and these cute mini dessert cups with spoons at Giant Eagle and they look so cute and fancy and saved me time. I love that Giant Eagle not only has all the food items I need for a great basketball viewing party but the serving dishes to make it stand out too!
After all those desserts and calories I am so glad I decided to grab Coke Zero to enjoy a great tasting carbonated drink and not keep adding to my calorie count! As of now my team is still hanging in there and doing well, how about you?
