As a mom of four I am really busy but I take making a home cooked meal seriously. I know I can provide better nutrition if I cook the meal myself plus I love to cook for my family. As my girls get older we get busier and busier but family dinner is always a priority, we never miss it! Tuesdays and Wednesdays are especially challenging days as each day I have to go to the dance studio 2 different times with means a total of 4 trips to the dance studio. This makes for a hectic day and on those days I am hardly home enough to cook so I turn to my slow-cooker for help. I recently was challenged to create a quick and easy meal that helps me to #LoveEveryMinute of life while using Minute Ready-To-Serve Rice. We love Minute rice and I cook it often in my rice maker but I had yet to try the Minute Ready-To-Serve Rice. For my recipe I knew I had to use my slow-cooker it is my best piece of advice to overworked moms, use a slow-cooker that way you can make dinner when it fits your schedule like early morning! After browsing my cabinets and freezer I came up with a delicious meal and it goes perfectly with Minute Ready-To-Serve Rice brown and wild rice.

Redwine Cranberry Chicken and Rice Slow-cooker Recipe

  • 4 boneless skinless chicken breasts
  • 1 cup red wine vinegar
  • 1 cup brown sugar
  • 1 cup dried cranberries
  • 1 tbs minced garlic
  • 1 tbs paprika
  • Minute Ready-To-Serve Rice Brown and Wild Rice

Mix brown sugar, red wine vinegar, garlic and paprika together in a bowl. Place chicken breasts in slow-cooker and pour the sauce over the chicken. Add in cranberries to slow-cooker and cook on low for 6-8 hours. Once the chicken is ready microwave your Minute Ready-To-Serve Rice and serve with chicken.

Since my kids are still not sold on the delicious taste of brown and wild rice I can get them the white rice variety for dinner and everyone is happy. After making this dish I realized it would also be delicious with pork substituted for the chicken so we are trying that this week. Overall the recipe was  a hit, it is very sweet so the kids devoured it! I was so happy to walk in the door from dance to a home cooked meal waiting and all  I needed was one minute to cook the rice not the normal 20 minutes my rice maker takes!

  9. Does this look and sound lip-smackin’ good. And I just happen to have dried cranberries and was wondering what would be a good recipe! I’ve not used wine vinegar in such a large amount, but I’m all for it, seeing you’ve taken the guess work out of it. You have no idea how hungry you’ve just made me! I like the idea of wild rice, too, b/c it really gives it panache!
